Fruit Kabobs



For Easter, my mom made us a special treat -- fruit kabobs that you self assemble from this adorable watermelon fruit basket!  



It was a fun afternoon treat to enjoy the skewers filled with a variety of fresh fruit.  Something different for a change -- would be a hit at a party or even for a fun snack with kids (or adults who happen to be big kids).  

Fruit Kabobs

Pineapple
Kiwi
Grapes
Cantaloup balls
Strawberry
Watermelon
Other fruit as desired
Wooden skewers

Dice all the fruit into large 1-2 inch cubes.  Strawberries and grapes likely don't need any other prep than to be taken off of the stems and for strawberries, removing the tops.  


Place all the fruit in a large bowl.  If desired, carve out a basket from a personal-sized watermelon.  Then, allow each person to build their own kabob.  


Serve fresh and enjoy!


Raspberry Blueberry Banana Muffins



A simple, fantastic breakfast (or afternoon snack).

Bananas.
Raspberries.
Blueberries.
Applesauce.
Whole Wheat Flour.
Honey.  


The list of goodness in these muffins just grows and grows.  Hope you enjoy them too.  



Raspberry Blueberry Banana Muffins - Inspired by Bake for Happy Kids

1 C white whole wheat flour
1 C whole wheat flour
3 tsp. baking powder
1/2 tsp. salt
1/2 C honey
1 medium overripe banana, mashed
2 eggs
1/4 C applesauce
1/2 C milk
1 tsp. vanilla
1 C blueberries
1 C raspberries

Begin by combining the flours, baking powder, and salt in a large bowl.


Mash up the banana.



Add to the mashed banana, the applesauce, eggs, milk and vanilla.  Stir well.


Mix the moist ingredients together with the dry ones.


Then, stir in the berries.


Scoop into lightly greased muffin tins; fill 2/3 of the way full.



Bake at 350 for 20-22 minutes, until a toothpick inserted comes out clean, and muffins are lightly browned on the top.


Makes 12 muffins + 1 mini loaf

Homemade Yogurt



I love a good yogurt, so naturally I decided I wanted to make some of my own.  I've seen numerous recipes floating around about how to make yogurt using your crockpot, but I could never work up the courage to try making it that way.  I guess I know too much microbiology....



My in-laws gave Frog Prince and I a EuroCuisine Yogurt Maker for Christmas last year, and we've been putting it to good use.  I love the individual-sized yogurt containers to make the yogurt and I also love that they are glass -- which means I can sterilize them well in the dishwasher before making the yogurt, and I don't have to worry about incubating plastic.


The result is a delicious, creamy yogurt after 9-10 hours of incubation!


We've used the yogurt more recently to make a wonderful frozen yogurt -- can't wait to share that recipe with you too.

Homemade Yogurt - From EuroCusine

42 oz. 1% milk*
6-8 oz. Greek Yogurt {plain}

Begin by pouring the milk into a clean and dry saucepan.  Heat the milk over medium heat, stirring constantly, until the mixture reaches 180 degrees.  This is the boiling point for milk, so let it boil (allowing the milk to climb the sides of the pan a bit) for about 1 minute; again, stirring constantly.


Remove the saucepan from the head and allow the milk to cool down to 110 degrees.  To hasten the process, I carefully place the warm saucepan into a cold bowl of water/ice.  I allow it to sit for ~5 minutes, replenish the cold water/ice mix and repeat until the milk reaches 110 degrees.


Combine half of the Greek yogurt with ~1/2 C lukewarm milk and stir until yogurt is dissolved in milk.  Then, add the rest of the yogurt and mix well.


Stir the milk/yogurt mixture back into the rest of the milk in the saucepan, and stir until well combined. At this point, I transfer all the milk to a large glass measuring cup or, leave it in the sauce pan -- whichever is easier for pouring.


Carefully pour the milk mixture into the 7 glass jars.


 Place the jars (without lids) into the yogurt maker.  Cover the yogurt maker; turn it on and set the timer for ~11 hours (up to 12-13 hours if you're using skim milk).


Allow the yogurt cultures to incubate and then when they are done, cover and refrigerate for at least 3 hours before serving.


*I've made batches of yogurt using skim and 1%; I personally like the texture better with 1% milk, but the skim milk worked just fine.  Use what you would prefer!

Roasted Turkey and Veggie Spread


Sandwiches for lunch can get a little boring from time to time, especially when we're limited here to cold-cut sandwiches (no PB and J here!).


This sandwich was a perfect change up on our normal sandwiches.  It reminds me of the filling from our baked veggie sandwiches.  Yum.


In fact, it's so tasty, I recently whipped up another batch - a vegetarian version - to enjoy for my lunches this week while I'm on spring break.  The veggies packed in this sandwich are wonderful, you won't even miss the meat.

Roasted Turkey and Veggie Spread - Inspired by Sweet Treats and More

4 oz. light cream cheese, softened
1/2 C chopped/shredded carrots
4 oz. mushrooms, chopped
1/2 C broccoli, chopped
1 medium red bell pepper, chopped
1 T onion flakes
2 tsp. minced garlic
1 C shredded turkey or chicken (cooked)*
1 T olive oil
Sea Salt, to taste
Pepper, to taste

*Optional.  Omit for a veggie variety.

Begin by chopping the veggies.  I did this by hand... but would use a food processor if I had one!!  Place the veggies on a cookie sheet, or in a glass baking dish.


Drizzle with olive oil, salt and pepper. Stir to combine.


Toss in the turkey, and mix well.


Place the dish in an oven pre-heated to 350 degrees. Roast the veggies for 15-20 minutes, stirring at least once during that cooking time.

Pull the veggie dish out of the oven. Add in the softened cream cheese.


Stir until well coated.


Serve warm, or refrigerate to serve later as a chilled sandwich.


We enjoyed this spread with crackers, atop a slice of bread, and in a "grilled cheese" of sorts, using Havarti cheese!

1-Minute Cran-Apple Crisp


All the credit for this easy, make-in-minutes, treat goes to my little sister.  While she was staying with me last week, she developed this combination.


Three easy ingredients, combine to make a wonderfully healthy afternoon snack, breakfast, or even a dessert.

1-Minute Cran-Apple Crisp - Laura
{Serves 1}

1 C applesauce
1 T craisins
2 T homemade granola

Warm the applesauce in the microwave for about 45 seconds.  Stir in craisins.  Top with granola.


Stir to comibine.

Enjoy!

Super Bowl Munchies: Cinnamon Pretzels



Want a pretzel that tastes like a mini doughnut?!  


I know.  They're good.  And, they really do have that mini doughnut taste.  I like the combo of the sweet and salty - oh my.  

These would be a great addition to a Super Bowl party spread; offering a hint of something sweet amidst the cheesy, spicy, gooey dishes that are bound to make an appearance.  

Cinnamon Sugar Pretzels - Adapted from the Baking Junkie

1-2 (16oz) bag of fat-free pretzel twists
1/8 C oil; I used olive oil
1/3 C sugar
2 tsp. cinnamon

Begin by pouring the pretzels into a large bowl.


When I made the recipe, I combined the cinnamon and sugar with the olive oil as the original recipe suggested.  


Only problem was... when I cut down the amount of oil, I ended up with globs of cinnamon/sugar/oil.  Gross.  


After enough stirring, I was able to make this work; but I have different recommendations for you.  First, drizzle the olive oil over the pretzels and stir to coat.  

Then, mix together the cinnamon and sugar.  


Sprinkle this mixture over the lightly-oiled pretzels.  


Bake the pretzels at 300 degrees for 30-40 minutes; stir every 10 minutes.  

Allow the pretzels to cool, and then serve.
