Rustic Garlic Toast



This is such a basic garlic toast. It is surprisingly simple and as addictive as any of the butter-drenched garlic bread we grew up with. I learned this basic recipe from Heidi at the Joie Gastronomy in Naramata on Lake Okanagan. The view from her outdoor kitchens is inspiration to a plethora of exciting dishes from many diverse cultures.

**Rustic Garlic Toast**
  • 1 loaf rustic bread, sliced
  • olive oil
  • 1 - 2 whole garlic cloves
  • kosher salt or sea salt
1. Toast the bread on the grill or in the oven, or simply in the toaster. When both sides are lightly browned, use a peeled garlic clove like a pencil eraser and rub it lightly on the toast. (I do mean lightly or the flavour will be overpowering).
 
2. Brush a light film of delicious olive oil over the garlic and perhaps a sprinkling of sea salt or kosher salt.
That's it!!! I said it was easy!!!
Alternatively...........
Top the toast at the last minute with a salad of finely diced tomatoes, perhaps minced onion, shredded basil, olive oil, balsamic vinegar, salt and pepper.
Or.....
Use these toasts as a cracker when serving cheese ( I love goat cheese and olive paste)
Or...
Dice the basic garlic toast to create croutons.
