Last week, we had planned for some dinner dishes that just never materialized. I was on campus later than anticipated several days this week, and our leftovers lasted us longer than we expected - so we didn't get to the chicken dishes we had on our menu last week.
Friday night, our fridge was pretty empty and I got home 2 hours later than I planned. Enter the challenge of trying to find a quick and yummy dinner. I pulled out frozen cooked chicken sausages from the freezer, added some mushrooms and broccoli, and served it over pasta with white cheddar cheese.
