One of the things I love in the fall is a good apple crisp. I think I actually like apple crisp better than apple pie.
But, sometimes I'm lazy.
Sometimes, I want the taste of apple crisp without the work. Not that apple crisp is challenging to make... but sometimes I just want a short cut. Anyone else ever feel this way?
When my need for a short cut is really bad... I just take some homemade applesauce and sprinkle it with granola, and a dab of ice cream. That's the real easy way.
But, this way gives more of the apple crisp flavor and texture.... and it's quite easy too!
Cheaters Apple Crisp - Finding Joy in My Kitchen

3-4 medium sized apples, variety is of your choosing
1 T flour
2 T sugar (or honey)
1/2 tsp. cinnamon
~1 C homemade granola {regular, or pumpkin spice}
Slice the apples and toss them in a lightly greased 9-inch pie plate with flour, sugar/honey and cinnamon.
Sprinkle granola over the top.
Bake at 375 for 25-30 minutes until apples are bubbly and cooked.
Enjoy your easy, apple crisp!
We've made two batches of this recently ... one with pumpkin spice granola on the top, one with regular brown sugar granola -- they are both excellent! But, the pumpkin spice granola adds a really nice compliment to the apple!
