Blackberry Breakfast Bars
I found a special on blackberries this week! Combine that with my hubby's recent decision that there will be no more cereal for him (since watching Food Inc), and I'm trying out some new breakfast recipes. I enjoy homemade granola almost every breakfast, but this these yummy blackberry muffins (made into bars) are a really nice change!
Blackberry Breakfast Bars - Adapted from Stay at Home Moms Money Savers
1/2 C applesauce
3/4 C brown sugar
1 egg
1 C wheat flour
1 C white wheat flour
2 tsp. baking powder
1/2 tsp. salt
1/2 C milk
2 C fresh or frozen blackberries
Mix together the flours, baking powder, and salt.
In a second bowl, combine brown sugar, and egg.
Combine the wet and dry ingredients together.
Then, add in the milk.
Reserve 1/2 C of berries. Add remaining berries to the batter by folding them in carefully!
Pour into a greased 9x13 baking dish. Top with additional berries.
(I made a half batch, and baked it in an 8x8)
Bake at 375 for about 40 minutes.
Cut into muffin bars :)
These freeze really well -- and warm up nicely for breakfast!
We feel much better enjoying a whole wheat, low sugar, fruity muffin for breakfast :)
