Breakfast Pizza


Looking for something different in your breakfast routine? This breakfast pizza is a snap to make (with no-rise wheat pizza crust) and offers a filling start to your day!

Crust Recipe - From Amy at The Finer Things in Life

1 T yeast
1 C really warm water (but not too hot that it kills the yeast -- that is, not boiling!)
1 tsp. sugar
1 tsp. salt
2 T olive oil
1.5 C whole wheat flour
1 C white flour


Toppings


4-6 eggs, scrambled
4 strips of bacon, diced
1/2 green bell pepper, diced
4 oz. mushrooms, diced
4 oz. extra sharp cheddar cheese, shredded


Prepare the crust by mixing warm water, sugar and yeast in a small bowl. Allow yeast mix to sit while you mix the dry ingredients together. Then add oil and salt to the yeast mixture and stir.

Add the wet ingredients to the dry ones, and stir to combine. Knead the dough (about 5 minutes) on a lightly floured surface until firm.


Cover and set dough aside for 5-10 minutes while you prepare the veggies. Setting the dough aside for a few minutes helps make the dough easy to roll out into a pizza.

Slice the mushrooms and dice the green peppers. You may also be interested in adding: onions, tomatoes, red or yellow peppers, etc! Then, preheat the oven to 425.

Then, roll the pizza out to fit your pizza tray! I got all excited about being able to make round pizza, only to realize that we have a rectangular pizza tray.... oops! The dough makes 1-16 inch pizza.

Place the pizza dough on a greased pizza sheet, or on an ungreased pizza stone. Top with veggies.

Bake the pizza for about 10 minutes. Meanwhile, mix up the eggs with salt and pepper to taste, and scramble them. Dice the bacon and shred the cheese while the pizza is baking.


Remove the pizza from the oven, and top with eggs and cheese.

Return the pizza to bake for an addition 10ish minutes, until cheese is melty :) While the pizza finishes baking, cook the bacon until crispy! When the pizza is done, top with bacon.


Slice and serve.
