Apple Cinnamon French Toast


Looking for something a little different during "Hot Breakfast Month", I found a recipe for Holiday French Toast from Kristen's Kitchen. The recipe looked tasty enough, with cinnamon and apples... and we decided to try it. This recipe is prepped the night before, which made it perfect for "Spring Ahead Sunday" today :)

We made some changes, as the original recipe called for 1 stick of butter and 8 eggs - which I reduced drastically - and it tasted great. I'm sure it would be excellent with whole wheat bread too, we just had leftover French Bread to use up.

Apple Cinnamon French Toast

4 apples, peeled and sliced
2 heaping T brown sugar
1-2 tsp. of cinnamon, divided
3 T butter, melted
8 slices of french bread (enough to fill the pan) - we used homemade
3 eggs, whisked
1 C milk
1 tsp. vanilla


Peel, core and slice apples... I love my apple peeler, correr, slicer for this... in fact, this gadget likely gets the most use of our kitchen gadgets as we make homemade applesauce and fruit chews almost weekly.


Layer apples on the bottom of a 9x13 pan.


Sprinkle with brown sugar and 1 tsp. of cinnamon.


Melt butter and pour over apples.


Layer French Bread over the top of the apples.


Mix together eggs, milk and vanilla.


Pour egg mixture over the top of the toast, making sure to coat bread well.


Cover and refrigerate overnight. In the morning, sprinkle french toast with additional 1 tsp. cinnamon, and cover with tinfoil. Bake at 350 for 45 minutes. Uncover and bake for an additional 15 minutes, until french toast is browned.


Allow to cool and serve warm.
