Oatmeal Tea Bread


During our Countdown to 2011, I found a great recipe from Jackie for "the best ever muffins".


I decided to give them a try, since I do love oats!


This bread is quite delicious, sweet, but not overly sweet -- pairs nicely with tea!  I bet that's why it's called "tea bread"!


Oatmeal Tea Bread - Adapted from Loving My Domestic Life

1/4 C milk
1 egg
2 T olive oil
1 1/4 C applesauce
1 C oats
1/2 tsp. nutmeg
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/2 C brown sugar
1/8 C sugar
1/2 C whole wheat flour
3/4 C all purpose flour

1 T brown sugar
1/2 tsp. cinnamon
1 T oats

Begin by mixing the dry ingredients together in a large bowl.


This includes the sugars, baking soda, salt, oats and spices.


Then, stir in the flour.


In a second bowl, combine the olive oil, applesauce, egg and milk. Mix well.


Combine the applesauce mixture together with the flour mixture.


Stir until just moist.


Spread into a lightly greased bread loaf pan.


Combine the 1/2 tsp. cinnamon, 1 T brown sugar and 1 T oats together in a small container and then sprinkle this topping over the bread.


Bake at 350 for 45minutes to an 1 hour, or until a toothpick comes out clean when inserted in the center of the loaf.  Alternatively, you can make muffins -- baking for ~15-18 minutes, or until done.


Cool on a wire cooling wrack.


Then, slice and serve.
