This past week, I finally watched a Food Network Show! I got a DVD of Alton Brown's "Good Eats" from the library, and enjoyed watching him make homemade yogurt, yogurt cheese and frozen yogurt. Yum. Alton just happens to be the chef of the week for the Food Network Chef's Cooking Challenge!
What I really enjoyed about "Good Eats" was all the science Alton Brown incorporated into the show! Yes, I'm a science nerd, so I really appreciate knowing why cooking works!
But, I did not pick to make yogurt this week. Instead, I made yummy sweet potato waffles! As is par for my course, I did add my own flair, so I'm not sure they're still Alton's waffles -- but they are tasty :)
Sweet Potato Waffles - Adapted from Alton Brown
1 C mashed sweet potato
1 C white flour
1 C wheat flour
1 T baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 egg
1/4 C brown sugar, packed
1 C milk
3 T butter, melted
Mix sweet potato and melted butter together with the egg, milk and brown sugar.
Then, mix together the dry ingredients (wheat flour, flour, salt, baking soda and cinnamon).
Add the wet ingredients to the dry ones and stir together.
Batter will be thick. In fact, it was so thick that I added another 1/2 C milk.
Then, scoop about a 1/2 C of batter into a waffle plate and cook according to waffle maker directions.
Serve warm with warmed applesauce or maple syrup.
Verdict: These are delicious with just a hint of sweet potato. The cinnamon and applesauce make a delightful pairing with this waffle.
The original waffle recipe did not call for whole wheat, used whipped egg whites and added orange zest... I'm sure that would be good too, but I didn't want to use up a half dozen eggs, and I didn't have any oranges.
