I do love sweet potatoes. I have since I was a little girl.
Sweet potato muffins have been on my breakfast list to try for a while now -- almost a year! But, this weekend with the rush of cooler weather, I baked up my sweet potatoes for these delicious muffins.
Sweet Potato Muffins - Modified from Laura at Heavenly Homemakers
2 C whole wheat flour
2 tsp. baking powder
1 tsp. nutmeg
1/2 tsp. sea salt
1/4 C honey
1/4 C brown sugar
1 egg
1 C sweet potato, mashed
1/4 C raisins, optional
1/2 C milk
3 T applesauce
1/4-1/2 C granola (for topping)
In a large bowl, combine flour, salt, nutmeg and baking powder.
Add to the flour the honey, brown sugar, egg, sweet potato, milk and applesauce.
Mix together the ingredients.
Scoop dough into greased muffin cups (you'll need about 15 muffin cups).
Top with a tsp. or so of granola. Press granola lightly into the muffins.
Bake at 400 for 12-15 minutes, or until muffins are done.
These smelled delicious while baking and were filling and tasty. I definitely shouldn't have waited a year to make these :) Next time I'll add some cinnamon. Yum.
