Today I am doing a little housecleaning with older posts not yet published. Life is insanely busy just at the moment...so hope you enjoy!! This asparagus side dish added a flavourful accompaniment to our lamb dinner of a few weeks ago. Simple but elegant tied together with chives.
**Grilled Asparagus with Lemon & Chive Dressing**
For the lemon and chive dressing:
1 lemon, juiced
3-4 T olive oil
1 shallot, finely chopped
small handful fresh chives, chopped
salt and freshly ground black pepper
Asparagus

For the lemon and chive dressing, mix the juice of the lemon in a bowl with the olive oil, chopped shallot and chives and season with salt and freshly ground black pepper. Mix dressing with asparagus. Place asparagus in a griddle pan on medium high heat on barbecue. Cook in griddle pan for 3 or 4 minutes. Dress with any remaining lemon and chive vinaigrette. Serve.
