Mint Chocolate Chip Ice Cream



Vanilla is my all-time favorite flavor of ice cream.  But, sometimes we need to change things up a bit. Dark chocolate, anyone? 


Let me introduce you to a new favorite ice cream -- Mint Chocolate Chip.  


Mint Chocolate Chip Ice Cream - Finding Joy in My Kitchen

3/4 C sugar
1 C whipping cream
2 C half and half
1/4 tsp. vanilla extract
3/4 tsp. peppermint extract
1 C dark chocolate chips, chopped

Combine the sugar, whipping cream, and half and half together in a large bowl with a pour spout.  Stir until the sugar is well combined.

Add in the extracts and stir again.  Then, carefully pour into your ice cream maker, according to your manufacturers directions.  Need an ice cream maker, then, please stay tuned to enter my giveaway for your chance to win one!! {Giveaway coming next week!}


Allow the ice cream to mix for 20ish minutes, until it begins to solidify.  Meanwhile, chop those chocolate chips a bit so they get all broken up.  


After 20 minutes, add the chocolate pieces to the ice cream.  


Give it 10 minutes or so to mix the chocolate chunks into the ice cream. 


Remove the beaters from the ice cream maker and scoop the ice cream into freezer containers.  


Allow the ice cream to harden in the freezer for 2-4 hours before serving; unless you want to taste some at the soft-serve consistency.  Then, by all means, go ahead and sample.  


Serve in fun bowls and enjoy the treat!


Mmmm.  Makes me wish we still had some in our freezer.
