A quick and healthier alternative to ice cream sandwiches made with graham crackers and whipping cream!
Mock Ice Cream Sandwiches - Taste of Home
2 C fat free whipped topping
1/2 C miniature semisweet chocolate chips
8 whole chocolate graham crackers (make your own!)
In a bowl, combine whipped topping and chocolate chips. Break graham crackers in half. Spread whipped topping mixture over half of the graham crackers and top with the other half of the cracker. Freeze in plastic wrap or containers for at least 1 hour. Makes 8 sandwiches. The longer you freeze, the better - as the crackers soften to become more like sandwich wafers. They keep in the freezer for a couple of weeks before getting freezer burned.
