Soup in a Pumpkin Recipe

Have a pumpkin you forgot to carve? Or too many in your garden? Try out this creamy soup with chunks of noodles, meat, and veggies. Surprisingly it's not very pumpkin-y in flavor, but it was easy to make, yummy to eat and the kids were just enthralled with the fact that it was cooked inside of a pumpkin. As mentioned it is easy to make, but the cooking time in 1-1/2 to 2 hours, so plan your starting time accordingly.

The ingredients...

1 medium sized pumpkin
1 can cream of chicken soup
1 can cream of celery soup
1 can chicken alphabet soup
1 cup orzo noodles, uncooked
3 carrots, sliced
3 celery stalks, sliced
4 chicken breasts, cubed
1/2 cup scallions, diced
1 soup can of water
1/3 cup sour cream
1/2 tsp. nutmeg

Slice off top of 1 medium pumpkin; clean out inside of pumpkin and set aside. Sauté the cut up chicken breasts in 3 Tbs. butter. Remove chicken and sauté the carrots, celery, and scallions. Then add the remaining ingredients. Mix well and pour into hollow pumpkin (sorry Matt and Karey --your pumpkin with foot holes won't work).

Before cooking.

Top with pumpkin top. Place on baking sheet and bake in 350° oven for 90-120 minutes.

After cooking.

When serving scrape pumpkin sides to get chunks of pumpkin. Serve hot with salad and bread. Serves 6.
