Once again, this was something that all my kids just loved. At first I was a little scared off by the fry bread in this recipe, but then I noticed that it didn't have much other fat in the recipe other than the fat it is fried in...and since I used olive oil I decided that it couldn't be too bad. If you really don't want the fry bread (which I think is totally worth it) you could also use warmed tortillas.
Meat sauce ingredients:
1/2 cup onion, chopped
1 Tbs. butter
1-lb. ground beef or turkey
1 Tbs. chili powder
1 can (15-oz) corn, drained
1 can chili beans, do not drain
Fry bread ingredients:
2 cups flour
1 tsp. baking powder
1/2 tsp. salt
1 Tbs. butter
3/4 cup warm water
Toppings (as desired):
tomatoes
cheddar cheese, grated
sour cream
salsa or taco sauce
guacamole or avocado
chopped lettuce
Directions:
Mix flour, baking powder, and salt. Add butter and water to make soft dough. Pat out into four rounds.
Fry each in hot oil until puffy and golden brown, flipping once.
For meat sauce:
Sauté onion in butter. Add beef or turkey to brown. Drain. Add chili powder, corn, and beans. Simmer until thick.
Top each piece of fry bread with 1/4 of mix. Top with toppings. We actually made some rice to put below the meat sauce, so we ended up with enough topping for 8 pieces of fry bread.
Serves 4-6, depending on how large/thick you make the fry bread.
