Spaghetti Squash Spaghetti



Are you looking for a way to eat fewer carbs?  How about get in more veggies to your daily eating?  If so - or if not - please try this spaghetti squash spaghetti.  


Rather than pasta, this dish uses spaghetti squash as the "noodle".  This makes it great for your GF friends!  It's incredibly easy to make -- just like spaghetti, only this time, you have additional yummy veggies in the mix.  


Spaghetti Squash Spaghetti - Finding Joy in My Kitchen

1 medium spaghetti squash
1 recipe, quick spaghetti sauce
1/2 lb. ground turkey, or beef {optional}
Parmesan cheese {optional}

Slice your spaghetti squash is half. Remove the seeds. Place half of it face down in a 9x9 glass baking dish. Add a little water, and cook it in the microwave for 10-15 minutes, or until squash is tender. Alternatively, you can bake the squash in the oven, for about 1 hour.


Meanwhile, brown the ground turkey or beef in a pan.  Then, add the tomatoes, etc., from the quick spaghetti sauce.  If you are not using meat, just begin by assembling the spaghetti sauce.  Simmer until warm.


Feel free to add additional spaghetti veggies, if you wish.  We love mushrooms, so you can almost always find those on our plate.  Bell peppers are another fun add-in.  Or, if you have picky eaters, try pureeing some carrots and adding those to the sauce.  They'll never know; and, as an added bonus, the acid from the tomato gets reduced a bit!  That works for me.  


Using a fork, scrape the squash until it looks like spaghetti.


Top with the spaghetti sauce and Parmesan cheese, if desired.


Serve warm.
