Wheat Buttermilk Pancakes

One of the things I miss in dealing with struggles related to my food allergies, is going out to eat. We hardly ever do so around here. When I did go out to eat, I loved getting pancakes -- yum. Buttermilk pancakes. Not the most healthy (the restaurant variety, that is), but they are certainly tasty!



Golden in color. Perfectly delicious. Yum.

So, I tried to create my own :) And, with some success, I present, wheat buttermilk pancakes made without oil!

Wheat Buttermilk Pancakes

1 C whole wheat flour
1 C all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 T brown sugar/honey
1/4 C applesauce
1 egg
2 C buttermilk (or 2 T vinegar + milk to make 2 C)*


Sift together the dry ingredients.



Mix applesauce, buttermilk, egg and sugar together.



Add dry and wet ingredients together and whisk until moist. Look at all the bubbles!



Pre-heat a griddle to 300ish degrees, and use a 1/4 C measuring cup to create pancakes on the griddle. Grill on one side until bubbly, then flip and continue cooking until golden brown.





Serve with fresh fruit sauce for a real treat.



*when you make your own "buttermilk" let the vinegar and milk sit together for about 10 minutes before using in the recipe.
