Lemony Crisp Cookies



This is an easy, delicious dessert. Yes, it's from a box.... but sometimes I can't resist. These lemony cookies would make a great Easter dessert!

Lemony Crisps
- Pillsbury Lemon Cake Mix Box

Cookies:
1 pkg. Pillsbury Moist Supreme Lemon Premium Cake Mix
1/4-1/3 C oil
2 eggs
1/4 C sugar

Glaze:
1 C powdered sugar
2-3 T lemon juice

Heat oven to 375.

Mix cake, oil and eggs, and stir with a spoon until thoroughly moistened.




Shape dough into 1-inch balls, and roll in sugar. Place 2 inches apart on a greased cookie sheet.


Use the bottom of a glass to flatten cookies to 1/4 inch thickness.


Bake at 375 for 5-7 minutes or until edges are lightly golden brown. Cool 1 minute.

Remove from cookie sheet.


Optional Glaze: Combine powdered sugar and lemon juice until smooth. Drizzle over cookies and sprinkle with colored sugar before icing sets.

Makes about 4 dozen cookies.
